What’s up, Eddie? I just happen to be based in Miami as well. I’m the horticulturist at Galloway Farm Nursery in South Miami. I’m also a total chilehead (at last count, my collection was up to over 2K varieties, though I’m not sure how many of them are still viable). I’m at our main site on 87th Avenue just south of Sunset M-W. I’d be more than happy to walk you through everything you need to know about growing in our climate (yes, I even have the fix for whitefly). I can also give you some tips on how to safely make sauces, including fermented and aged sauces. Ask around; most of the old hands around here will tell you that a fermented sauce is where it’s at.
