Hi James here Been fond of hot peppers of all sorts for many years one year I grew over 400 plants of various varieties I couldn't figure out what to do with them got the growing part down it's the processing.. I've done a few small ferments . Like to do more and maybe get a side hustle going im allowed to sell fermented goods in indiana , im guessing from reading that with a ph lower than 4.0 after fermantation i can do a hot/hold and be good.
