Label/Packaging: The label is kind of plain, white and green with a pattern of flowers/leaves. HABermelon is clearly visable.

Appearance/Aroma: The aroma that hits me immediately is both sweet and hot. You can smell the watermelon and the pungent habs pretty much equally. Great color and consistency.

Body of Review:
I was fortunate enough to try a few of Brian (Justaguy) of Knepper's Peppers' sauces. I have thoroughly enjoyed them all, including the Tongue Wrapper, Piney Hab, and this one. While he is an upstart, he definitely has a talent for combining great flavors. This one intrigued me because he said a lot of people said it could not be done due to the water content of the watermelons. I am here to tell you that it can be done and can be done well. The consistency is terrific and the taste is a surprise of fresh melon flavor followed by gentle but building heat from the habs. You can taste the carrots, and I have to tell you I didn't know how they could possibly work in this sauce, but they do. I think they add body and a little sweetness. Brian has pulled off something I have never seen before; a sauce made with watermelon that actually has body. The ingredient list is simple and you can taste every ingredient individually. This is a well made sauce. Now what to do with it?
Heat Level: 5.5

Applications: I first tried it on wings, and the taste is great, but I think it is more suited for lighter foods like seafood or cheeses. I could also see this sauce used with chicken breast or pork loin. Maybe even as a dipping sauce for sushi.

Notes: I think this is a fantastic sauce with great flavor, consistency, and background heat. It lends itself well to light foods, and is one heckuva creative sauce. Well done Knepper's Peppers.

Great review does it have any vinegar type of twang in the sauce? Sounds like a great seafood / sushi sauce.
 
I kept the vinegar out of this sauce since the lemon juice keeps pH down. Oh and the flavor profile wouldn't like vinegar. :D

That's what I thought. I need to order a bottle the old lady makes amazing sushi and summer sashmi after a long day fishing is amazing!
 
lucky you. Being a single dad I don't get surprised with yummy meals like that. Hard to surprise yourself when you cook it.
 
I was surprised at how much I liked HABermelon. It's such a strange sounding sauce, to have watermelon in it. However, every single one of Knepper's sauces I've tried have been delicious. They're just so unlike anything else out there, a great fresh tasting flavor, and the fruit & peppers really stand out in each of his sauces.
 
I'm almost through a bottle of Hab Orange, and just opened my Habermelon last night. Enjoyed it poured over a nice 5yr aged cheddar with crackers, it was deeelicioso. Great too as a way to kick-up fruit....just plain red grapes with the Habemelon is mouthwateringly good.
