food Olive Salad for Muffeletta's

Whether you celebrate the season far away or right in your backyard. You can have a taste of New Orleans and their great sandwiches known as muffulettas. The assembley is standard. Just layer salami, swiss cheese, ham, and provolone cheese on a seeded round or on french bread and top with olive salad.

The secret to the muffuletta is the olive salad. Here is the secret recipe for this:

One 32-ounce jar pimento-stuffed green olives
2 cups black olives
8 cloves garlic
1 medium-sized white onion
1 large carrot
2 ribs celery
1/2 cup cauliflower
1 teaspoon each: dried basil, oregano, and thyme
1/2 cup olive oil
Use a food processor, pulse each ingredient until finely chopped. Combine with the dried herbs. Add olive oil to wet the mixture. Store covered and refrigerated, until ready to use.
The olive salad gets better after it has a few days for the flavors to blend
 
Something about these sandwiches is just so right,I can't explain it,must be the way the evoo counteracts all the pork-fat,making a perfectly ballenced meal!Best bread I've found is Ciabotta rounds at Sweetbay.
