Made this for breakfast today thought I'd share.

OK, so my presentation wasn't perfect, but I was hungry give me a break.
Here's how it went down....
Chili pan holder thing will be my marker thingy mabob.
I used
- 1/2 Chopped Jalapeno seeds and all
- 1 shoot of green onion chopped
- 1 patty of ground turkey (I already used up the assuage )
- 3 large eggs
- 1 Tbps of Butter
- 1/2 a cup of shredded mixed cheese (mexican)
- Chipotle Salsa to taste
- Seasoning to taste In this case cayenne, salt, fresh ground pepper
- For those on a Diet, substitute eggs for egg whites, and butter for with low fat cooking spray.
Start ground turkey and butter in a medium size omelet pan. Season meat to taste.
When meat is about 1/2 cooked, add garlic, peppers, and onions.
Cook until the garlic turns a golden color and the meat is cooked through.
Then set mixture aside on a plate. Dont Eat Any! sheesh
In the same pan you just used, add 3 beaten egg. Some additional butter may be needed depending on your pan.
Tilt pan and lift the edges to allow the uncooked egg to go underneath. Repeat until there is very little uncooked egg on top.
At this point you turn off your burner and flip the eggs carefully.
Now add meat filling, cheese, salsa, or what ever your heart desires.
Roll on to a plate and garnish with cheese, salsa, or whatever.
