My first two pequins ripened today and I picked them and they are soft. They were hard when they were green and just turned red today. I wonder why? They seem juicy inside too. Anyone else come across this?

Piquins are full of juice. After they turn red they start to become more soft. If you want them hard, pick them right when they turn, like, that instant.
Careful as not to get pequin juice in your eye when you pick them.
