wanted Powder's wanted for honey, and honey jelly product experiment...

I have read a few posts here about powders and mixes of powder's. For the most part happy members who buy and sell them.

I need some powder (say 4 to 6 ounces, four types listed below) enough for experiments with home made honey from a buddy of mine, he has 1000 hives,

and has just centrifuge spun 8000 lbs of fresh honey. He has been at his business ten years and has a loyal customer base already.

Need to experiment with powders or powder mixes to kick the honey up, from medium, to hot, to very hot, to insanely hot.

I am open to suggestions, and for the time being may consider using your powders on a larger scale if this takes off.

He already has a customer base and adds new hives weekly, he just captured three colonies and set them up this week.

The best part about it is people pay him to remove the colonies and he adds them to his growing stock of bees.

We are going to experiment with honey and blueberry honey jelly to start.

I am open to suggestions, I was thinking Fatalli to start and then on up from there.

Sounds like a really fun project you have going!

Just a couple quick thoughts-
if you use powders, the honey will have little speck all through it and might not look so good. Maybe try using pieces of DRIED whole chiles. They would look cool, like the vinegar bottles with garlic and chiles in them. Don't use fresh chiles, as you don't want to introduce moisture to the honey.

If you try a couple test bottles of honey with dried pods and it works, you'll probably want to invest in a really good micro-gram digital scale. You can never get every chile to be the same heat, but you can reduce the variables by putting the same amount of dried chile in each jar by weight.

Fatalii chiles are a great one to start with, and I think a Red Savina (or at least Carribean Red Habaner-type) would be good. We like Lemon Drop chiles, they aren't as hot, but would still look good. Might be a little tough finding some chiles this time of year, although there are some growers in Florida who have some various pods for sale. And you might have to purchase the fresh pods, dry them and then use them in the honey.

if you want to hit the top of the heat scales, ya gotta look at the 7 Pots (yellows and reds).

Anyway, it sounds like a great project. Hope you keep us posted~

Oh, and that was just my opinion about using dried chiles instead of the fresh ones. I've never worked with honey and chiles. If someone has other info, please post~

Thanks for the encouragement and sage advice about an accurate scale. As to whether I use flakes, powder, or even puree made from fresh peppers is a ball in the air that needs to be tested. I believe fresh is best, but not at the expense of limited shelf life, how long do puree's last anyway, I have no idea. I will take a picture of his five gallon containers with fresh honey and post to show how much he has. I found it incredible to say the least. In talking to him because he is a third generation islander he has access to land and greehouses as well, so maybe my pepper dream of a business in hard to grow Rhode Island may be a pre-retirement posssibilty, although not anywhere near the scale that I hoped for. The general public just doesn't understand how tricky it is to grow super hots in temperate climates and the effort involved.

My friend makes honey straws that you bite, are about 8 inches long, which may be the ideal way to get people to try the amped up honey That's it for now..

just had a couple thoughts on getting the flavor into the honey. These are just suggestions, and maybe it'll work, or maybe it'll lead you to something that will work.

first idea-
take a small amount of honey in a pan, add a lot of chiles (fresh or dried) and bring it to a boil. Let it set for a while to draw the heat and flavor out of the chiles. I know you don't normally want to boil honey as that destroys a lot of the beneficial stuff in the honey. But for this, you're only boiling as small amount to draw out the chile stuff. Next, strain the honey to remove the chile bits and mix the infused honey back into the rest of the honey. Strain it through a SS fine mesh colander or through cheese cloth. If the honey is warm enough, it will go through the cheese cloth and cheese cloth would let you use powders.

For a ratio, I'm thinking you could boil 1 cup of honey with 1/2-3/4 cup chiles or powders and then mix that back into 1 or 2 gallons of raw honey. That should get you quite the chile flavor in the honey. 1 cup of cooked honey in 1-2 gallons of raw shouldn't make it any less healthy overall.

You might not even need to boil it, but just warming it might be enough to draw out the chile oils and flavors.

A second possibility would be to put the powder or chiles in a cheese cloth bundle, and then let that set in the honey for a while. Kinda like a "bouquet garni" but with chiles instead of herbs. :lol: Might be enough to get the flavors into the honey without having to heat it.

Not sure how well a puree would work. That seems like it would make the honey murky, as well as adding a lot of moisture to the mix and possibly other ingredients like vinegar and salt. My first inclinations would be to use dry chiles or powders or possibly a fresh pod.

Time for some experiments? :)

Both are really great ideas, use what you have at the time, fresh or powdered, I have a feeling the powder will work much faster,but the fresh may be good for folks who don't want excessive amounts of heat. I will mention it to my bee keeper buddy, we rescuedhives yesterday, interesting to watch and participate in. I have some raw HD video and audio that needs editing before posting. Will let you know if he does as it is his business and show. Now, if I could only get some powder or fresh pods, hehe...
