pruning

The only time I've pruned my peppers are when I first get them growing then I top them after about a month. When should I be pruning? I'm in Florida so my peppers stay outside basically all year.

That depends. What goals are you trying to achieve by pruning?

Biggest yield if you have a long season (which you do living in Florida) comes from not pruning excessively. At most you would want to trim leaves that are touching the ground or possibly clean out a few leaves in the middle to improve airflow if you are having trouble with moisture.

Peppers don't need to be topped or pruned to turn into gigantic bushes given the right growing conditions & enough time, both of which you have in Tampa. Just let nature do its thing.
