Psycho Chicken & Vegetable Soup

A tasty chicken and vegetable soup packed with hot chilli punch!

Serves: 6-8
Prep Time: 15 mins
Cook Time: 75 mins

Ingredients:
------------
3 Tblsp olive oil
1 leek, pale section only, washed & finely diced
3 cloves of garlic finely chopped or 1 level Tbsp minced garlic
1 large carrot diced
1 medium parsnip diced
2 stalks celery chopped
10 green string beans cut into thirds
1/3 capsicum(bell pepper) diced
1/2 cup super sweetcorn kernels
4 x super hot chilli peppers (Bhut,Scorpion,7 Pot - your favourites) finely chopped
2L (8 cups) chicken stock
250ml (1 cup) water
400g chicken thighs(skin off) finely sliced

Method:

Heat the oil in a large saucepan over medium-high heat, add all vegetables, sautee until leek is softened.

Add the stock & water, raise heat & bring to a gentle boil, mix well.

Pan fry chicken until almost cooked through, add to pot.

Let simmer for 60 minutes or until harder veges are soft.

Serve with a slice of garlic bread!

Add 1/2 cup chopped mushrooms
 
I always include the mushies, gotta love em', I make variations this soup once a week and have a bowl everyday for lunch! Just can't get enough...
