container Question on container size

I'm relativly new to growing peppers(my third year), I read alot about people gradually increasing the container size when the plant gets root bound, my question is, whats wrong with taking the seedling from it's little tiny pot and going straight to a 5 or 7 gallon one?
 
Nothing. I go straight from the cup it was started in to the ground.

Most people don't have the space to go straight to large pots, though, since they started their peppers months before it's safe for them to go outside and their peppers are getting huge.
 
I wish I had room to transplant straight from 9 oz cups to 5 gallon pots...if I did, I sure would save some work...
 
I have better results with gradually increasing my pot size. The way I see it, with too big of a pot they don't use up water quickly enough so there is not much oxygen exchange and roots aren't happy. and they take up more room and earth.
