recipe Rabbit Recipes

As the title says rabbit recipes does anyone have any they'd like to share?

I managed to track down a butcher that sold dressed rabbit and am leaning towards a slow cooked rabbit stew. Or maybe a herb roasted rabbit.

If you have a recipe then please share it :)
 
LV you can sub rabbit for anything you would do with chicken. Keep in mind it'll be a bit tougher if using wild and less so with domestic. Perfect for cooking low and slow.

Rabbit does actually taste like chicken, So as TB, You can substitute it for Chicken or even gator if your in the south. Man do I have a CRAVING FOR GATOR!
 
i use to work in a rabbit processing plant(to put it nicely.lol)

we use to marinate them in different things then vaccuum seal them..

combinations were... lemon-garlic - teriyaki - cajun hot

we use to grill them just like we did chicken. my mothers favorite was making a simple stew out of them

hunter style. Slow cooked rabbit with field mushroom

1 rabbit, cut into 8 pieces (have your butcher do this if you have not dressed one before)
field mushrooms, cleaned and thickly sliced
1/2 kg sausage cut up into 3
1 cinnamon sticks
2 onion, chopped
celery, chopped
carrot, chopped
2 clove garlic, sliced
2 bay leaves (I prefer fresh)
Salt and pepper
Chilli flakes
1 cup white wine
1/2 cup chicken/bacon or beef stock
1 can Italian tomatoes
Extra virgin olive oil
Herbs - i use parsley is about it, but use what you want and to taste..

175C. OVEN
Chuck everything in... mix well
Cook for 1& 1/2 hours or until the meat feels soft and pulls away easily from the bone

I usually do this in the bush, in a camp oven on an open fire for about 3 hrs.... and good for chicken too ;)

There was that chef that always wanted to turn Bugs Bunny into Hossenpfeffer, or some such dish.(spelling definitely off on that one)

Not sure of the recipe. It looked like carrots were involed though.;)
 
here is one i used for a jack rabbit last year.
it turned out great and am looking forward to more rabbit this year.

the recipe is all to taste since i didnt measure the ingredients.


rabbit rub

dried rosemary
dried thyme
garlic powder
onion powder
powdered mustard
paprika
granada seasoning powder


rub into both sides of the back rabbit legs
sear on high heat in oil until skin is crispy
then grill on a alder slab of wood until internal temp is close to 160F

I'd forgotten about this thread :lol:

We ended up doing our rabbit in the slow cooker, it was okay not in a hurry to try it that way again. If I have rabbit again it might be a roasted one.
