Red Congo

So, I just tried the Red Congo for the first time....Took a big ole' bite out of it. thats a hot little buggar. Maybe next time I will deseed and de-vein it first.
 
Jamie (romy6) recently hooked me up with a couple of red congos and I absolutely loved the flavor. The heat was on par with a habanero but the flavor had a great sweetness to it. To me it started out with the taste of a bhut jolokia and finished with the flavor of a red bell pepper. Great transition in the flavors.
 
I really am looking forward to trying the Datil, and the Fatalli..They need to start growing ALREADY!

EDIT:
Here is a photo of the "Red Congo-Apricot" jelly I told you that I made the other day. Has the flavor, but not as much heat as the raw pod. Your post reminds me, I need to share a jelly "how to" thread.
