Restaurant Week Practice And Actual Event

just wanted to share a few pictures......

here's a few pictures of my class practicing last night. took us 4 hours to practice. it was a headache trying to handle all these teens and early 20s kids to keep their voices down and actually listen what we had to say (people in charge).

we made paella, tuna ceviche, and mushroom espresso (mushroom soup with truffle oil)....

didn't have any pictures of the other stuff. only got the paella nicely plated.

paella was cooked risotto style. a squid ink rice chip as a garnish and for texture. parsley oil and saffron oil.

sorry no pictures of me. lol.

gonna post more practice days on monday then the actual event a few days after that

practice was done at my house, in the garage.

It's an open garage. Above it is my room. The garage doubles as a place to hang out. =)

When it rains it gets really hard to park the car. Tiles are quite slippery.
 
Thanks. We're still tweaking the recipe a bit coz the paella feels too much like a risotto than an actual paella. Paellas are cooked with long grain rice. We used arborio since it was a risotto style play on paella. I think it feels a little confused, dishwise.
 
man i love a good risotto. carnolini?

paella's part of spanish filipino cuisine. so we have this all the time. lol.

we're doing a european-ish style menu.
