I met Matthew the sauce-maker from Mattachini’s through the Western Australian Chilli Seed Exchange Group on Facebook and he was nice enough to send me some to try … I had literally no idea what to expect … but first things first … both MammaCass and I absolutely love your labels man … they are excellent … the wax was cool too but without fingernails I struggle so much with wax bottles …
The sauce itself was really damn good … sweet flavour to start with … then the flavour of the chillies starts to grow … and grow … a really nice burn … and in all honestly I almost hiccupped … this is really good … I can’t wait to use it with food and see what it mixes perfectly with … but I do think it is going to make a damn good dipping sauce … I really like this one man … can’t wait to try your chutney …
