Scotch Bonnet/Bird sauce

I have a few scotch bonnets and a bunch of bird peppers, and would like to make a sauce. Does anyone have recipes? Preferably not that hot, but I can handle pretty hot heat.

Roasted garlic and mango sounds good. Roasting garlic adds a sweetness and takes some edge off. That also helps it pair well with mango. Would be a nice sauce with those peppers. KISS, not much else needed.
 
I think I'd do it like this:
 
SB peppers, rice vinegar, bird peppers, roasted garlic, onion, lime juice, pineapple juice, salt.
 
You could also do a straight bird pepper sauce with vinegar and fresh garlic.
 
I'd just cook it up. Never used a recipe myself. But I'm not a ferment guy, someone will chime in.
