food Slow Cooker Chipotle Pork

Ok so here is a recipe I kinda throw together once in a while. It's pretty smoking good so I thought I'd share. The recipe changes depending on what I have in the fridge/freezer, it's quite flexible.

Here is the currently cooking concoction:

2 Pork Tenderloins
4 chipotle peppers in adobo (about half a can, plus half the sauce)
1 can of crushed tomatoes
3 cups of beef stock
2 tsp of oregano
2 garlic cloves grated/chopped/crushed whatever


I take the pork, chop it into 2" chunks, toss it in the slow cooker. Pour the ingredients on top, cover and put it on low for 6 hours or more. Remove the lid, shred the meat.

Put in taco's, tortilla's etc.

I like mine with some lime juice, cilantro and cajohn's oaxacan hot sauce (which has ZERO heat but great flavour) in corn tortilla's.

This goes great with mexican style black beans.
