Small Tribute to the "Big Easy"


 
A nice startup would be a Hurricane made from scratch........or...
 

 
How bout a snack of the local  Chips, Brew, and some Crystal Hot Sauce  ?........but better yet...
 
 
 
 
 

 
The startup to some Gumbo.
Indgredients: Red and Green Sweet Peppers, Onion, Tomato, Fresh Cayenne Peppers, Bay Leaves, Celery, Garlic, Okra, Andouille Sausage, Chicken Thighs, Worcestershire Sauce, Chicken Stock (4qts used), Cajun Creole Seasoning, Rice, Paprika, Flour, Duck Fat.
 

 
Roux was made first  using Duck Fat and Flour equal parts. Bring Roux to a Chocolate Color. Add sliced Sausage...followed by Trinity (Bell Pepper, Celery and Onion)...add Chicken Thighs, chopped Garlic,Tomato,  sliced Cayenne Peppers, Tomato, sliced Okra, Chicken Stock and Seasonings. Bring to boil, place lid on and heat in 350 deg oven for an hr.
 

 
Chicken Gumbo with Andouille Sausage..............it gets better...
 
 
 
 
 

 
The start to a sandwich.
Ingredients: Lettuce, Tomato, Oysters, Cayenne Powder, Jalapenos, Crystal Hot Sauce, Romulade Sauce, Pickles, Cajun Creole Seasoning, Buttermilk, Garlic and Onion Powders, Corn Meal, Flour.
 

 
Drain and marinade Oysters in Buttermilk, Hot Sauce, Creole Seasonings, Garlic and Onion Powders for 30 minutes. 
Coat Oysters in mixture of Corn Meal, Flour, Cayenne, Garlic and Onion Powders....pinch of Salt. Place in fridge for 30 minutes. Bring Oil to 360 deg.
 

 
Fry in batches until all Oysters are finished.
 

 
Plating shot..   Oyster Po'Boy.....Sliced French Bread bottomed with Romulade Sauce, Lettuce, Tomatoes, Pickles and a generous amount of fried Oysters....Chips, Roasted Jalapeno and a Abita Beer
