preservation Smoking peppers for the dehydrator

That's about how I do it. Smoking is not as big around here as over there, so we have to make do with what we have.
Have Weber and oak wine barrel shavings, works great.

How does the oak compare to fruit woods like apple, pecan, peach, etc?

Oak works great .
I have  not used any other to compare it with unfortunately.
 
Nice. We got an electric smoker at Home Depot on sale over the summer and I have used that to dehydrate/smoke some scotch bonnets, Caribbean super hots (whatever those are - look like little pumpkins about 2-3x size of bonnets), Jalapenos, and also Hungarian hot wax peppers for hot paprika.
