Smoking Super Hots

Hey guys. Back again. I have been saving all of my peppers I dont use and have vacuum packed and frozen them. Decided that since I dont have any more room in my freezer at all, and its contents are peppers, peppers, a few popsicles, some ice, and more peppers, it is now time to make some sauces and some powders. Ended up doing a yellow and a red batch. Both of them Mesquite smoked. Ended up having to use my small charcoal grill as my smoker is no longer with us. Will be welding up a new one soon. Without further delay, here goes.

Yellows:
With the yellows, I chose the following for the powder.

Yellow Bhut Jolokia
Fatalii
Yellow 7 Pods
Yellow Devils Tongue
Big Sun Habanero

This was mostly Fataliis and Yellow 7 Pods with a good 2 handfuls of each of the others.

Got the chips soaking.

I have yet to get out the coffe grinder, but will be doing so tomorrow! Cant wait to smell it once the dust settles. My whole house and yard smells delicious!!

Now then, on to the Reds.

For the reds, I chose to go with the following.

CPI Bhut Jolokias
Trinidad Scorpions(Thanks PepperLover)
Bhut Jolokias
Bhut Jolokia x Dorset Naga Crosses
Habalokias
Paper Lanterns
Caribbean Red Habaneros
Red Devils Tongue
Dorset Naga
And topped it all off with some Chocolate Bhut Jolokias

Red Tray:
This was mostly CPI Bhuts, Bhut x Dorset Crosses, Scorpions, Caribbean Reds, and equal parts of all others.

Took em off the grill. Tossed em around a bit with the tongs again. This was a 5 hour battle. There was a lot of peppers in there, and with the constant refilling and chip soaking and keeping the peppers from cooking instead of smoking, I was doing a lot of walking. However, when I was just enjoying the cool evening and having a few drinks on the patio by the grill with the great aroma, I was more relaxed than ever. I love cooking. Especially on the grill. I miss my big ont!!! Anyways, back to the picture. A lettle blurry from the steam.

Now good and smoked, and headed on the dehydrator as well. My neighbors asked me what was going on last night, cause you could smell it a few houses down in the morning when I cranked the dehydrator back up.

Got 5 racks altogether. 3 red and 2 yellow. Going to grind em up tomorrow, and update everybody. Hoping to have a good amount. I still have many a pound of peppers to smoke, so let me know if anybody has some ideas or experiments.

Once you start smoking em, its not exactly something you can put on hold, so this went on into the wee hours of morning. I wrapped everything up at about 1:30 in the morning and started the dehydrator on a 15min on 15min off timer till I got up this morning. Worked great. Not completely dried yet. Want them to dry a little slower and see if they retain better flavor and such. Will put up some pics of the powder, and a quick taste profile test.
