Hello, just starting my hot sauce journey. I had an over abundance of jalapenos this year and decided to use the red ones for hot sauce and the green ones for salsa. My first ever batch of hot sauce was fermented for 33 days. I like to taste my hot sauce without burning my tastebuds. After reading and listening to recipes, I decided my first batch would be just peppers. So i did 2 red sweet peppers, 1.5# of my jalapenos and 4 habaneros for heat. Fermented with 3% brine in a 64oz jar with one of those S shaped airlocks (Marketplace purchase for $5 a jar w/ fermenter and lid, got 4). Anyway, strained off brine, mixed w/ handheld blending stick, strained, added 1 cup apple cider vinegar and walla, hot sauce was made. Like I said, I like flavor and not a lot of heat. I was thinking of smoking the sweet or hot peppers. I have since added carrots to the mix. was also thinking of a Vidalia onion or sweet potato. I also want to start growing a variety of hot peppers and maybe visit craft fairs and stuff like that in the future. Anyway, just saying hi.
