this is something I make and really enjoy. it's easy and quick -just the way I like to cook.
you will need:
banana peppers
package of Mexican chorizo
8 oz package of cheese (i use mexican blend)
can of enchilada sauce
combine the cheese and chorizo. remove the pepper tops and slice each down the side (i remove the seeds/membranes). stuff each pepper with the chorizo/cheese mixture and place them in a baking dish (like a 9x12). cover them with the can of enchilada sauce and cover the dish with aluminum foil. bake at 425F for about 40 minutes (longer for softer peppers, shorter for firmer).
we eat these on tortillas. you could add onion/sour cream/etc on the tortilla - just like a taco. whatever you feel up to.
