food Stuffed Poblano

So I made some stuffed poblanos tonight and they were pretty darn good!
-1- Start off with 4 big poblanos (roasted and peeled)
-2- cook some chorizo in a pan
-3- when it is finished cooking put the sausage in a bowl but leave the fat in the pan
-4- saute some onions and mushrooms in the fat
-5- cook some spanish rice
-6- mix the rice chorizo mushrooms and onions together
-7- crumble some fresco cheese in the stuffing
-8- stuff the peppers with the mix
-9- crumble more fresco on top of the peppers
-10- bake at 350 until the cheese on top is brown

I would put measurements for the ingredients but 1. I was kinda drunk :beer: 2. it will depend on how big your peppers are

Those look delicious. How do you roast them? I usually broil them but sometimes I have a problem getting the skin off, even after steaming them in a paper bag. Maybe just need to broil them longer.

Try roasting peppers on the grill, until black and bubbly, then paper bag'm.
just a suggestion. it all works!
 
Looks mighty tasty HillBilly. I could go for a few of them right now.

Now I have to add poblamos to my grow list. I may have to cut back on those other veggies in my garden to make more room for peppers.
