food Stuffed Portabello Mushrooms...Italian Style

4 mid-sized portobello caps, stemmed and cleaned
4 slices of bacon, cooked and crumbled
1/2 c. crumbled feta cheese
1 large button mushroom, chopped small
3 cloves garlic, minced
1/4 c. extra virgin olive oil
1/4 c. fresh basil,
2 Roma tomatoes, chopped small
3 Tabasco Peppers, minced
Shaved parmesan cheese to top

Combine all ingredients except parmesan and portobello caps in a glass bowl, cover and refridgerate for 1 hour (longer if you have time).
Preheat oven to 350 degrees.
Place portobello caps upside down in a large baking dish, and divide filling evenly among them.
Top with shaved or grated parmesan (however much you want, just get a good coating on there).
Bake for 25 minutes on middle rack.
Turn on broiler, and move mushrooms to top rack for 5 minutes to brown the cheese.
Let stand for 5 minutes before serving, and enjoy!
This one is great to make ahead of time. You can skip the refridgeration time for the filling and just stuff the caps early in the day and leave in the fridge. Just take them out when you start to preheat the oven to let them warm up a little.

the only thing i would have done differently is substitute the feta cheese with goatsmilk cheese....wait, that's only if i just got a hair cut and was looking for "hair cut sex" and having trouble persuading the wife. Cheap barber joke, everytime i get my hair cut, my italian/canadian barber says "tonight you will get new hair cut sex".

i use a lot of feta cheese and one thing that really makes portobello mushrooms standout is a nice dose of goatsmilk cheese.

keep up the good receipes, i have been following, including the martini.

Hey Texas...I have a bunch of good Food pics. My problem is when I go to post them they want a website address. They are in a file on my computer under 'pictures' and don't have a website address. So that limits me to pulling them off of my website (those pics DO have a website address).

PJ, you can upload your photos to a file hosting site like, http://tinypic.com/, http://www.flickr.com/, or http://photobucket.com/ to name a few. All of these sites will give you a web link so that you can share your photos or, post them on forums like thehotpepper.


The Portabello's look great definitely a dish to try out next week.
