Sweet potatoes!

So I buried a few sweet potato slips a little over a month ago and here they grow... Okinawans, Murasakis, and O'henrys. Two more months of baking in the ground and out they will come. It's almost too easy.. the greens are also excellent sauteed in a little olive oil and garlic and a dash of soy sauce!

I'd love to try to grow some sweet potatoes in my green house. Could you please give a step by step manual to what you did? It would be greatly appreciated :P

Easy peasy! I researched which sweet potato appealed to me... there are dozens and dozens of varieties, and I didn't want to grow what is commonly available at the grocer... so I chose 3 varieties (preferring the drier type of sweet potato I choose the purple fleshed Okinawan, the red skinned yellow-cream fleshed Murasaki, and the white fleshed O'henry. Since these varieties aren't available at my grocery I ordered slips from a vendor (Gurneys) and planted them in my raised bed upon receiving them.

Slips are very easy to grow from a sweet potato - just stick a potato halfway in water suspended by toothpicks and the vines will emerge days and weeks after (similar to how kids will get an avocado seed to germinate).

So now I just water and wait...sweet potatoes love the heat and are easy growing in the Florida summer. After 3 months baking in the raised bed I should have lots of taters!

I'll have to see how much I can grow in the green house since Denmark doesn't have the hottest of climas.
I guess I'll have to wait until next year though.

how long do you keep your sweet potatoes in the ground for? I had some and have heard to pick them when there's a frost, but we don't get those in miami lol I bought the vines, didn't start from a potato.

This is my first go at it. From what I have read they will be good after they've baked 3 months in the ground. Thanks to technology my phone is set to remind me come September.

     Just keep in mind that sweet taters need to be stored for a few weeks at high temps (~85-95F) with high humidity after harvest to callus over and cure. Doing so allows the tubers to convert starches to sugar and gives them a chance to heal any wounds they sustained during harvest.
     I've grown sweet potatoes for the last few years and can attest that they store longer and taste much better if they are cured properly after harvest. Being in Florida, you'll probably have much better luck than I did maintaining high heat and humidity during that time. :D

for some reason i had lots of vines but very small and few taters, they looked like white potatoes but were sweet, made mashed potatoes. was pretty good.
