1 reg potato
seasoning to taste
Chile peppers to taste
Add 1/2 cup dried mushrooms and mix. Let stand for about an hour, the Dried mushrooms will soak up the Potato sweat.
Marinade eggplants with sou-sauce and Chipotle.
Cook potato's first till brown, then add egg plants on top and continue to cook till done.
Add cheese (cedar) in the middle and fold, plate up
