"The firm was manufacturing acidified hot sauce without a license. The food was identified at a licensed retail store and was removed via a voluntary recall effort. The findings of the recall identified that most of the distribution was direct, online sales across the U.S.

Acidified foods are inherently high risk as the acidification is intended to control the hazard of botulism. The firm had not followed the necessary steps required to ensure safe production, beyond just licensing. They had not consulted with a process authority to have a scheduled process developed.

The process details out the necessary controls, such as pH value (acidity), thermal process (cooking), container integrity, and other factors. Additionally, the firm was not maintaining records of any processing activity that was occurring."

"I have been advised by the Oregon Department of Agriculture
that I have been producing a product that needs a particular license in order
to be sold to consumers online. Out of an abundance of caution, I am
initiating a recall of Blue Tape Sriracha. The affected products were sold
between January 2024 and August 2024.

The Oregon Department of Agriculture advises you to throw
away or destroy any product that you still have. There are no identifiable issues
with the product, except that it was sold to you without the proper license in
place."
