Thoughts?

First let me say this forum is awesome. I have learned a lot just reading other threads. I am super excited to read more and learn more about growing.
 
I have had a strange issue with my pepper plants recently. A lot of the leaves on them are starting to fold in half. At first it was just a plant or two and now it seems like all of them are starting to look like taco shells. Thoughts on why this is happening?

We have been getting a ton of rain here in Nashville plus I was definitely over watering them for a few weeks. I laid off the watering but now the leaves are cupping like this. My plan as of right now is to leave them alone and let nature work itself out. However, if you guys see something I am not please let me know. I have not done a PH test on the soil but my guess is that it may be a bit acidic with all the rain we have been having.
