too dry?

Sorry if this has been covered, but I couldn't find it.

I started drying some bhut jolokias for powder in the dehydrator last night at 10 on 105 degrees. I'm house sitting for my in-laws for the next few days. I dropped it down to 95 before I left home this afternoon, but I won't be able to get home to check on them again until late tomorrow. Can they get too dry? If so, does it screw up the flavor or just the color?

Low temps shouldn't alter the color, the flavor should stay the same whether you dry at 100 or 125, and I don't think there's such a thing as TOO DRY .... well...maybe for jerky and fruit leather.

Will do. thanks for the input. They were still pliable this evening. I think the humidity is slowing things down, so I increased thee temp a little bit. Hopefully I can make some powder tomorrow.
