Gimme!!!!!! Those cookies looks superb, you sure know how to make a "colourful" cookie! They should be pretty hot too, BONUS!

I'm onto my second one now.. they came out pretty good and have a decent amount of heat.. goes really well with the chocolate.. dont think they'll last too long!!

rocky road is now set.. it is very rich so you only need a tiny piece but it is nice and spicy :)

Thanks guys :) it came out heaps better than i thought it would.. now the cupboard is stocked with spiked cookies... hahaha.. MrMel is not going to be happy! Sorry Omri.. when I got married I had to promise my dad i'd never get a divorce :P

roflmao @ Omri....

Hey mel, what about your dear ol' dad on THP....those look deliciously evil....

I'd send some to you AJ - but they'd go stale before you get them!! I can send you the recipe instead?? its pretty easy... just a standard cookie mix with the candied chilli's added on top.. (1/4 cup of sugar [i used raw] 1/8 cup of lime juice 1/8 cup of water.. dissolve the sugar, add the chilli, boil for three minutes, let it cool and then strain out the juice.. let chilli set).. although the juice was pretty good.. next time i'll add that to the mix for extra heat!

edit: if you want the rocky road recipe let me know.. i can send that through too.. it is evil though, very, very rich.. great if you love chocolate!

I would love it mel...even if you did send a couple, the mailmen probably would have them with a glass or two of milk...

I will make these tomorrow....

just one more pic for food-porns sake and i'm eating one now..... they're pretty firey thanks to the pods that nova sent across... really easy to make though!!

its good to be able to make a sweet chilli dish rather than the bacon/cheese kinda dishes i've been doing lately!

Don'tcha just love it when you wake up and there's a big tray of cookies waiting for you? ;)

Thank you for that, Mel!! I'd love to have the recipes....I'm a cookie SUPERFREAK.

YUMMMMMMMM!!!

"the best part of waking up is THP in your cup"

well, you get the idea

ok.. here's the recipe's... now keep in mind that when i cook i dont really measure things and your version may not necessarily end up the same.. but it should be close... the recipe for the chilli is above.. use whatever you want.. and if you want you could cook it longer and it would have a thicker coating to it.. If i did it again i'd probably use bigger pieces so keep that in mind..

cookie recipe (from www.taste.com.au http://www.taste.com.au/recipes/14052/triple+choc+cookies)
*** i only did a half batch and doubled the amount of cocoa... and added some melted chocolate too
Ingredients
125g butter, chopped
2 tsp vanilla essence
1 cup firmly-packed brown sugar
1 egg
3/4 cup (110g) plain flour
1/2 cup (75g) self-raising flour
2 tbs cocoa powder
125g milk choc bits
125g dark choc bits

Method
Preheat oven to 180°C. Line base of 2 baking trays with non-stick baking paper.
Using electric beaters, cream butter, vanilla and brown sugar in a large bowl until smooth (do not overbeat). Beat in egg.
Sift flours and cocoa together. Add flour mixture and choc bits to butter mixture, stir well to combine.
Place tablespoons of mixture onto prepared trays, leaving about 6cm between each. Bake, in batches, for 12-15 minutes or until just firm on the surface. Stand cookies on tray for 5 minutes then transfer to a wire rack to cool completely.

Rocky Road... I used the following ingredients, but you use what you want.. you can substitute the nuts, add coconut, snake lollys, various fruits (i've used dried cranberrys in the past) but add what you want!

200 grams of good quality dark chocolate (i used lindt 70% cocoa)
100 grams of milk chocolate (again lindt, but extra creamy milk choc)
30 grams of butter (with salt, but your choice)
a handful of tiny teddy honey biscuits crumbed up - but not too small
a handful of macadamia nuts, cut into bite size pieces
about a quarter of a smashed up violet crumble bar
a handful of marshmallows... i use the mini ones as chopping up marshmallows is painful!

method:
melt the chocolate (i just fill the sink with boiling water, stick in a pot and add the chocolate to the pot - do NOT get any water in the pot or it ruins it!)
add the butter, let it melt and mix it all together..

add your chopped up bits (including your candied chilli)..and your marshmallows.. make sure everything has a good coating of chocolate on it,,

take a look at your mixture, if you think you've got too much chocolate add some more 'bits'

have a smallish tray prepared with cling wrap and pour in your chocolate mixture.. whack it in the fridge and let it set, around an hour or two.. once set then slice it up into bits you can eat..
