ok.. here's the recipe's... now keep in mind that when i cook i dont really measure things and your version may not necessarily end up the same.. but it should be close... the recipe for the chilli is above.. use whatever you want.. and if you want you could cook it longer and it would have a thicker coating to it.. If i did it again i'd probably use bigger pieces so keep that in mind..
cookie recipe (from
www.taste.com.au http://www.taste.com.au/recipes/14052/triple+choc+cookies)
*** i only did a half batch and doubled the amount of cocoa... and added some melted chocolate too
Ingredients
125g butter, chopped
2 tsp vanilla essence
1 cup firmly-packed brown sugar
1 egg
3/4 cup (110g) plain flour
1/2 cup (75g) self-raising flour
2 tbs cocoa powder
125g milk choc bits
125g dark choc bits
Method
Preheat oven to 180°C. Line base of 2 baking trays with non-stick baking paper.
Using electric beaters, cream butter, vanilla and brown sugar in a large bowl until smooth (do not overbeat). Beat in egg.
Sift flours and cocoa together. Add flour mixture and choc bits to butter mixture, stir well to combine.
Place tablespoons of mixture onto prepared trays, leaving about 6cm between each. Bake, in batches, for 12-15 minutes or until just firm on the surface. Stand cookies on tray for 5 minutes then transfer to a wire rack to cool completely.
Rocky Road... I used the following ingredients, but you use what you want.. you can substitute the nuts, add coconut, snake lollys, various fruits (i've used dried cranberrys in the past) but add what you want!
200 grams of good quality dark chocolate (i used lindt 70% cocoa)
100 grams of milk chocolate (again lindt, but extra creamy milk choc)
30 grams of butter (with salt, but your choice)
a handful of tiny teddy honey biscuits crumbed up - but not too small
a handful of macadamia nuts, cut into bite size pieces
about a quarter of a smashed up violet crumble bar
a handful of marshmallows... i use the mini ones as chopping up marshmallows is painful!
method:
melt the chocolate (i just fill the sink with boiling water, stick in a pot and add the chocolate to the pot - do NOT get any water in the pot or it ruins it!)
add the butter, let it melt and mix it all together..
add your chopped up bits (including your candied chilli)..and your marshmallows.. make sure everything has a good coating of chocolate on it,,
take a look at your mixture, if you think you've got too much chocolate add some more 'bits'
have a smallish tray prepared with cling wrap and pour in your chocolate mixture.. whack it in the fridge and let it set, around an hour or two.. once set then slice it up into bits you can eat..
