seeds Viable seeds?

Thought some of you would have experience on this. If I was to pick lets say a yellow banana pepper and let it mature on the counter to red, would that increase the chances of the seeds being more viable and ready to grow?

No, you have too let it get ripe (red) on the plant itself.

i never let the peppers get ripe on the plant and i saved some jalapeno seeds and i had 10 out of 10 germ ratings

I pick some tabascos when orange and let them ripen to red on the counter and then harvest the seeds. No problemos at all.
