What a great thing the Naga Morich is....

The first of my superhots are ripening up - and being a total newbie with these I am very excited!
Cut the first Naga Morich open last night. It was probably a little on the small side for the variety, but what an amazing smell! It was always destined to be used in a chutney of some sort as I have been using a lot of apple based chili chutney on my lunch, so I was going to break my sauce making virginity also.

6 Granny Smith
500ml white vinegar
1 cup white sugar
1/4 cup malt vinegar
3 tsp crushed ginger
1 tsp salt
1 Naga Morich

Made around 800g of chutney.
Excellent taste - all sweet and fruity at first, then at around 5 seconds it warms up, doesn't get as hot as I would like it (but too hot for my wife), and starts to fade away at about 30 seconds leaving me wanting more! There is some flavour with the heat and it is good.... and such good flavour from just the one pod, it can only get better after a bit of trial and error.
As a first brew I am more than happy, should be all gone in a couple of weeks, and I will make it again, but will look to step up the chilli, and maybe cut the sugar down a touch at the same time.
