What variety do I HAVE to grow next season?

Hi all,
 
I grew my fair share of peppers, but I'm still looking for some good varieties. I already have my daily favorites, but I'm Always in for new things.
 
I'm growing the following this year (more will be sown, but this is wat is in the ground already)
 
- Trinidad Moruga Scorpion
- Trinidad Moruga Scorpion Caramel
- Trinidad Scorpion CARDI Yellow
- Habanero Chocolate Hand Grenade F4
- Fidalga Roxa
- Cheiro Roxa
- Aji Amarillo
- Budai Csipös
- Vezena Piperka x Hungarian Black F3 (still have to name it)
- Naga Morich
- Cheiro Pfefferianus (cross bred cheiro roxa, no clue what it mixed with)
- Bird's eye demon
- Not fatalii Jigsaw
- Pimenta Lisa F3
 
I'm planning to sow;
 
- Carolina Reaper
- Fatalii Jigsaw
- Maule's Red Hot
- Joe's long cayenne
- Cayenne Ring of Fire
 
So I have my share of superhots, but I'm actually looking for some very good annuum/baccatum varieties which can be used fresh for vietnamese noodlesoup (Phò) which go well with that style of cooking. Heat tolerance for fresh use is about up to 150k scovilles. So if there are any nice varieties out there, please let me know so that I can source them in time for next season.
 
 
I still have free space for about 12 varieties, I plan to make those milder varieties and if luck allows it, a very rare wild.
 
Thai Oranges?
 
Could go well with vietnamese food and great for snacking, or so I hear. I'm trying to score some seeds of them myself, heard great things.
 
Off the top of my head, I'd suggest Cream Fatalii, Brazilian Starfish, Ají Lemon Drop, Ót Hiêm, Cheongyang Gochu, Kaleidoscope, CGN 21500, Ají Panca, Trinidad Morovas, and Grove Peppers. I also hear Peanut is really good. I've got a few other ones started that sound good, but I haven't tried them yet: Pasilla de Oaxaca, Hair Pepper, Rain Forest, Dong Xuan Viet Market, Red Fatalii "Not," Jamy, Pitanga Laranha...
 
Kung Pao is very good in (what else?) Kung Pao Chicken. It would be good in about any Asian style stir frys, Chinese, Thai, etc. I've been growing it every year for about 10 years, saving seed from one year to another. If I recall correctly, it was sold by Park Seed as a hybrid, so strictly speaking I shouldn't call it Kung Pao. However, it doesn't seem to change at all.

One of my absolute favorite from the baccatum variety is the Brazilian Starfish. It is a pretty mild pepper, but the flavour in this one is out of this world.

A new addition for me was Hungarian Carrot pepper, nice sharp bite, great for salads, salsa and stir fry.
 
Can't live without Jamaican Hot Chocolate and Fatalii  (red Caribs too)

Also makes a nice seasoning powder, when dried.

Also, looking to grow Bahamian Goat and some other stuff, which I have seeds from Judy, Wicked Mike, CMP, and Grant at JungleRain.  :dance:
