Can near freezing temps push plants into producing more capsaicin for the pods? Similar to the way excessive heat stresses more capsaicin? I've had near freezing temps here but my plants are still alive with some nearly ripen pods.

I think you're right there. I was just thinking that the cold could push the plant into survival mode.
