breeding-crossing Would this work? (crossing question)

Okay, so say you’re trying to cross 2 plants. You got plant (a) and plant (b). (a) is more mature and is fruiting, (b) is young and not even budding yet. When (b) gets to the flowering stage. Could I pick all the fruits from (a) in order to time it just right so that when (b) starts to flower, (a) will flower and boom I can cross pollinate? Or do both plants pretty much have to grow up together at the same time, since I guess that’s “easier” as far as both plants flowering at the same time? Idk just wondering.
 
As long as the pollinated flower has enough time to give you a ripe pepper before the end of your growing season, it doesn't matter which approach you choose.
