If I'm doing it, definitely in the smoker, but my fiance who is not a pit master likes to use the crock pot.  Basically pork loin, or pork butt cut small enough to leave room around it in the crock.  Add a small amount of liquid (Beer, Soda, Stock) whatever makes ya happy.  Set on high and check...
