food my 1st attempt at infused salt

never made a salt infusion before but i figured id give it a go. Thought Id do a salt with a little smoky flavor.  After finishing up I think my ratios are little off but will see what comes our of it
 
Recipe--
1/4 C Salt
1 T Hickory liquid smoke
1/4 oz Ground Choc. Bhut Jolokia
enough hot water to make 1/2 C
 
Ingrediants used

Add liquid smoke to 1/4 cup salt

Add choc jolokia powder

fill with HOT water (this jar holds about 1/2 C) and shake

Pour contents in a tuperware and set in place to evaporate

Hey BB!  That looks pretty good - I'll be interested to see what the final product looks/tastes like.
 
IIRC you can get powdered liquid smoke from the Spice House and/or Penzy's.  I bought some of that and some powdered Worcestershire for use in BBQ rubs a year or so ago.  I've also had good luck using smoked salts with pepper powders.

Well the salt turned out....OK. Not exactly what I was hoping for. If I had to do again I would follwo the same steps in prep/ing used but when setting to dry I think the key is to get as thin of layer as possible. So I would not use tupperware but a cookie sheet next time. Cut down on evaporation time and get the crstalized salt like I was after. I was trying to recreate THP djinn salt. Leter I got his method/recipe. Its on here somewhere.

If you have a dehydrator and the sheets supplied for them that are for rollups...they work well too and much faster than air dry. Thin layer is the key for sure!
I bought my dehydrator long before roll-ups were thought of.....How about parchment paper?
 
I'm going to try a salt this year as well. I think I will dissolve in hot water, maybe even boil with the dried peppers for a bit, then put the liquid through a coffee filter. I will boil the remaining liquid down until the crystals start to form and the pot is mostly just wet crystals. Then I'll scrape them onto a cookie sheet and dry them the rest of the way in the oven on low.
 
A couple years ago we gathered sea salt off the rock flats on Gozo in the Med. About a pound. A lot was a bit dirty with debris. The above method was how I successfully cleaned it.
 
This way the product is an infused salt rather than a spice mix.

Salt is entirely up to you, dont think it matters just as long as its all dissolved. Yup your powder will work. i used powder.
 
I love the Ghost Pepper Salt from thespicelab.com.  So good!  I want to find someone on here to buy from soon as I run out.  Later I might try making my own just don't have time right now.

Bummed that it didn't work for you.

My method is this.
Has been a little more refined since I sent you some.


I warm up the water and saturate the warm/hot water to the point that it can't take any more salt. (I don't think I said that b4)I learned that from a few more failed attempts. I sometimes have had to add water to dissolve all of the salt.
Once salt is totally dissolved I turn off heat and let cool a bit and then add the powder. I kinda switched to the thought of cold brewing tea idea.
After a few hours or sometimes over night I put the mixture into a large Pyrex pan.

Then I wait.... And wait.
I keep mine in the oven take it out if I use it and put it back in a warm oven when done.

If I make a large batch it can take more than a week(s) . I try to not disturb the crystals (now) so that they get big.

I use the best salt I can get and the biggest crystals too.

Btw I also used really finely ground powder, I on my batch that is in the mix am using a powder flake combo will see how it works
 
I made some with kosher sea salt, coffee, and a dash of devils tongue powder which has quite a nutty smell to it in my opinion.... we'll see how it turns out.
