Yup, that is right. Imagine a meatloaf, wrapped and baked in a bacon weave and then sliced into patties and made into burgers.
Very simple recipe that I came up with a few months back. It is so simple that even my wife couldn't possible screw this one up! Yup, you heard me, Tasha, aka crazy-rat-lady, aka my wife!
First you'll need:
1 package of thick sliced bacon
1 pound of lean ground beef
2/3 cup panko bread crumbs
1/4 cup ketchup
1 egg
1/4 tsp. kosher salt (or to taste, but remember, that bacon is gunna add a lot of sodium!)
1/2 tsp. black pepper
2 tsp. minced garlic (we love garlic!)
hot pepper powder of your choice to your heat level (I use about 1/2 tsp. of chocolate habanero or similar)
First off, preheat your oven to 400 degrees Fahrenheit.
Then you'll need to make a bacon weave. A quick google search will turn up a zillion results, so we will skip that lesson.
In a big bowl combine the burger, panko bread crumbs, ketchup, egg, salt and pepper, garlic and hot pepper powder and mix by hand until mixed thoroughly.
Make a loaf out of the mixture and roll up in the bacon weave one time around with a little overlap. Cut off the excess bacon and place the loaf in a glass baking pan with the seam of the bacon facing down so it doesn't come apart.
Throw that bad boy in the oven, uncovered, for about an hour, or until the bacon is done.
Once done, allow to cool for a few and slice into whatever thickness patties yall want. From girly-man to cardiac arrest.
Now yall need the rest of the stuff to make a burger. That would be buns, cheese, sauces, etc, etc...
For buns, we like a good ole quality Kaiser roll, buttered and pan fried until golden brown.
For cheese, Heini's Fiesta Jack or Habanero cheese is the only way to go.
And now for the sauce. Ya gotta have a kickass sauce to go with that awesome burger, right? Well I got another simple sauce recipe that, in my opinion, really compliments this burger. And here it is:
Spicy garlic aioli:
3/4 cup of mayo
1/2 tsp. black pepper
1/2 tsp. kosher salt
1 Tbsp. lime juice
2 tsp. minced garlic
hot pepper powder of your choice (I use 1/4 tsp. chocolate or golden habanero powder and a dash of moruga powder)
Take all ingredients and mix well. Place in fridge for at least half an hour for flavors to blend. Slather on everything in sight.
