Real simple, blend desired peppers with 2 cups of pineapple juice and 1.5 cups of apple cider vinegar. boil and dissolve 5.5cups of sugar. boil for 10 minutes then add 2x 3oz liquid pectin and boil for 1 more minute. skim top, jar, cool, done. I used wicked mike's Aji Lemon Drops as well as his Trini Mystery hot peppers which I smoked. The aji lemon isn't spicy at all, should have kept some of the ribs but the other is perfect for me in terms fo spice with 2 peppers.
