I have never reviewed a sauce before, but I have reviewed several whiskeys and bourbons. I will treat these sauces as I would those.
First up, Bee-Bomb.
Color:
Pale, off colored green. Almost like someone took spring grass, and blended it into a liquid. No artificial colors here folks.
Texture:
Smooth, tiny grainular bits of blended pepper when pressed between the fingers. Not noticeable in the mouth or after swallow.
Smell:
On the first sniff- My nose was immediatly hit with the scent of fresh cut jalapenos. Followed directly by the distinct flavor of lime and vinegar. Almost like when you first open a bag of lime salted chips.
On the second sniff- There was a slight hint of heat lingering behind a slightly floral smell. Almost like a buttercup before the pollen is released in spring. Tickeling the nose.
Taste:
Absolutly no heat on this one guys. Just pure flavor. The sauce builds with garden fresh jalapeno flavor, and lime. As the sauce works its way past the front of your mouth and towards the back ; As the lime flavor begins to subside the honey begins to mingle with the fresh jalapeno flavor.
The Finish:
Very floral, and very sweet in the back of your throat. Almost like the sensation after drinking sweet tea. Light Pepper flavor on the exhale.
Overall:
Great for flavor, and sure to be good on lighter dishes. Might have more heat for those less accustomed to these types of sauces. YMMV

Second up was the Hornet Bomb.
Color:
This one has a very bright color to it. It looks exactly like the color of an almost ripened carribbean red habanero. Almost like a crayon. I know Pex doesn't use artificial coloring, so the color of this sauce is a testament to the ingredients he uses.
Texture:
Smooth. A perfect mixture between cream and tabasco sauce. I love the texture and pallet feel of this sauce.
Smell:
On the first sniff- pungent c. chinese flavor comes through, with a slight honey undertone. Barely noticeable.
On the secon sniff- Almost no citrus smell, but I can still detect it. Definetly less nose tickle than the 'Bee-Bomb'. This leaves me to believe there is less vinegar in this sauce.
Taste:
Smooth Hab flavor up front, and an immediate rush of honey. The flavor then quickly transitions to heat. The heat is primarily felt in the tongue, lips, an front gums. The heat is in typical habanero fashion, and quickly dissipates. The citrus and honey cut through the heat just as the heat descends to a slow burn on the tip of the tongue.
Finish:
The flavors of the Habanero peppers, honey, and citrus linger in the throat. On the exhale there is a feeling of heat and honey. Very pleasurable.
Overal: 8/10 Taste ; 5/10 Heat

Finally we come to the sauce, "To the Moon".
Color: This sauce has a very classic "rustic" looking color. The color is a orangish-burgundy and bits of seed and pepper are visible from the exterior of the bottle.
Texture:
This sauce was more like a light smooth mustard in texture. Save for the stray seed or two. Pours well, sticks to the sides of the bottle and develops a film on whatever it touches. Very good consitency for a sauce.
Smell:
This smells like smoked peppers. There is no other way to put it. It almost has the nose of a smoked head of cheese. On the back end of the smell there is a tiny hint of citrus notes, and the occassional hint of sweetness. I detect possible alder smoke? Maybe oak. The mouthfell of the smoke doesn't taste like hickory.
Taste:
This tastes exactly as it smells, and that is amazing. Replicating the flavor of the smell this sauce produces has me impressed. The heat on this sauce slowly builds, effecting the sides of the tongue, and back of the throat. There is a very smooth transition from flavor to heat, and it doesn't catch you by surprise. I would say the heat from this sauce would be comparable to a raw Yellow Fatalli pepper. The burn was gone after 3 minutes.
The finish:
Smokey Goodness. This is a sauce you have to taste to appreciate. Every exhale gives you a different depth of smoke and pepper.
Overall:
9/10 Flavor ; 6.5/10 Heat
