I plan to grow at lest one of these next season & was wondering what the flavor profile is.
I understand it to be good but was looking for more detail also was wondering how to tell when there ripe

I cant comment on the flavor, but ripeness of green peppers i usually go by feel... once they have a slight give, your in perfect range... practice on peppers that change color... feel them as the start to change and get a feel for their firmness when you know they are ripe by color... it will give you a good gauge on texture of green pepper ripeness...

I grew jigsaws 2 years ago that had green/mustard pods and was told they were probably gators. If they were, they had a very earthy, almost grassy flavour to me.

I got my gator jigsaws from 96strat and saved some seeds from them. Not nearly as hot as I expected, maybe 2-3x a standared grocery store orange hab.

Definitely had a grassy flavor and tastes "green" - not like broccoli or other veggies but it honestly tastes a bit like the smell when you cut the grass and I love that smell.
