hot-sauce Iron Mike's Bajan Pepper Sauce

This was a nice sauce. Flavor profile was very nice but I would love to try the regular recipe with the scotch bonnets. This one was explained as slightly hotter by Mike due to the substitution of peppers and I think that the increased heat MAY have drowned out some of the flavors but overall, very well made. Thanks Mike!

This one was way of of my "normal box" for hot sauces. I was intrigued by the color (I don't regularly see yellow hot sauces, although in SC yellow BBQ sauce is staple) so it had an immediate appeal. Of the ones I obtained, I rushed to try this one first. The aroma to me did have peppers, but it seemed sweet to the nose. My first taste was done in considerable volume, assuming wrongfully so, that it might be a bit more like a steak sauce of sorts with a little heat. Not so! It indeed is a stand alone hot sauce in every right. I realized immediately that I should have dipped my toe in the water instead of jumping in head first. My heat meter pegged, my nose ran, but the flavor was great! Wonderful melding of ingredients! Thumbs up from this ol' southern boy!

Great review, and thanks again for doing that, Ed. The Pinot Grigio is the brine I used for the ferment. As soon as I make another "regular" batch using just the Scotch Bonnets I'll get a bottle out to you. I'll have to make a batch of my green sauce too for you

When I first tried it it didn't seem very hot, so I proceeded to dump it on my pulled pork sandwiches. After I was done eating my mouth was blazing. Almost to panic mode. Milk wasn't really helpful either! The flavor of this sauce is great. Sweet and mustardy. Thanks again for the sauce Mike, it's greatly appreciated.

My wife SHOULD know better by now. I say the same thing to everyone when they ask if something is hot. "Nah, you'll like it"
 
Tried this sauce again tonight.  I know it probably wasn't intended for such, but I gotta give props where due.... Summer sausage, Iron Mike's Bajan, cold beer...  A better combo I've never had....
Discounting social subjects.. uhm...  I digress..

My wife generally stays away from anything crazy hot too but every once a
in a while she gets this " Grip it and rip it " attitude.   
 
When my buddy and I were cutting up the first ripe reaper,  from my first year growing it,   she just reached in and grabbed the biggest chunk and went to town.
 
She held it together long enough to get his girlfriend at the time to take a piece too, pretending it wasn't that  hot.   Shortly after that they were rummaging around in the fridge for cream cheese but  it shocked and impressed the hel outta me.  
 
Last year at a pool party, that same buddy brought Big Red Mama poppers  and different a girlfriend.    Same kind of deal, although this time my wife just wandered off into a corner of the pool for about 5  mins trying to keep it together.  lol.    Unsurprisingly this buddy is now onto another girlfriend.  lol

Wow! Very impressive, Ed! This was the first review of yours that I've seen and you did an excellent job! I enjoyed it so much that I just watched your review of MikeUSMC's Original Recipe (my favorite of his sauces..although, they all rock) and it made me reach for my bottle while searching for a straw. Lol. You have a great palate and are able to describe flavors and uses for the sauces. Great job all around!

I love your sauces, Mike! I'm not into "vinegary", thin sauces. I love the consistency of yours. Thick, sweet, and hot. You do great work!
