Newbie could use some help

Hi Folks
I started growing peppers last year. Made some descent sauces,both fermented and non fermented batches.
My question is I know fermentation stops around 2 week give or take.
But how long will peppers hold in jar after that. I have 3 jars that I put up last sept.
Colors still vibrant.
Any help is appreciated.
