over wintering plants in doors

I'm looking for some proven ideas on how to over winter a couple of my better producing plants. They are in 5 gal. buckets now ( they have holes in bottom so need to transplant), do I trim the back severely? thin root ball. size container? etc. all help is appreciated.

started some seeds today, just the first wave.
heres the start list:
Trinidad Scorpion yellow from seeds saved from AJ's 2010, 5 ea.
Trinidad Scorpion red " " " " " " " , 20 ea.
habanero red ,15 ea.
fatali ,10 ea.
peter red ,10 ea.
chocolate habanero ,10 ea.
bhut jolokia ,10 ea.
they are in a bio dome on heat mat set to 80 deg.f.

Does anyone know of a link or web site that describes how to save seeds true to their host plant,not cross polinated.I'm new to seed saving,the ones I've tried before didn't germinate... :think:

Started in Bio-dome on 2/10/10
heat mat at 85 deg.
window light
mild fert. from last year starting.don't remember the mix, but very mild.
