fermenting colour change in garlic cloves after 2-month lactoferment

Thank you for this info! I was wondering what was happening inside the ferment jar. I know minced garlic turns green when it is left out exposed to air, but submerged in brine I didn't think it would change colour so dramatically.

fermenting colour change in garlic cloves after 2-month lactoferment

Hi everyone, I lactofermented a mixture of chillies, chopped, and whole peeled garlic cloves, in 3% brine in a cool dark place (under my staircase) for 2 months. Normally I don't ferment this long because of the high temperatures here, but this one worked out nicely I think. But...all three...

Growing hot peppers in Kyoto, Japan

Been a while since my last update. A few days after my last post on 7th April, my plants had a big growth spurt, leaves and height: This would be the last photo of this year's seedlings all together, as soon afterwards I gave two of the chocolate jolokias to my chilli buddy at work: I also...

Getting some nice foliage on my plants. Also, it looks like it will soon be warm enough at night here to move these outdoors; maybe in 1 week or so. Sadly this also means I'm getting close to the time where I give most of these plants away (I can't grow more than about 5-6 plants this year)...

Growing hot peppers in Kyoto, Japan

Ciao amico, I plan to use my Buena Mulata chillies for fermented hot sauce. So we shall see! I am glad you liked my city, yes old though not quite as old as most Italian cities! We lack hot things, but I am working on changing this situation. Good luck and happy growing/burning this season!

Yes I hope this issue just affected that one choc bhut in the middle - its siblings either side of it are for the moment normal, touch wood! I'm paranoid about over-watering, so maybe it just got dried out too much at a critical time. Thank you for the tips @CaneDog!

Growing hot peppers in Kyoto, Japan

One week since my last post. Almost all the seedlings (except one Fatalii) have at least one pair of true leaves; the Buena Mulata have 2 or 3. One of the chocolate jolokias has strangely ruffled true leaves, I hope this is just a genetic freak of that one seed.

Seedlings are 1 - 2 weeks old. I invested in a slightly better LED. Fatalii seeds were disappointing for me, every single viable seedling was a helmet-head: I managed to rescue four. One spontaneously and inexplicably laid out and died, so they are now three. Choc bhutlahs and jolokias...

Growing hot peppers in Kyoto, Japan

Four days since my last glog entry. Moved almost all the seedlings out of the germinator/heat mat setup since many of there were touching the plastic dome or each other. Stronger/good seedlings on the left, those that are a bit ropey/reedy/scraggly on the right. Fatalii seemed to have a lot...

Growing hot peppers in Kyoto, Japan

Just an update on the sprouting. Seeds came up very asymmetrically, Buena Mulata first, then some Fatalii, and chocolate Bhutlah. Lost a couple of stuck seed husks. Only 1/10 chocolate Jolokia seeds has sprouted so far, I hope they are just taking their time and aren't a loss. I had to move...
