What an epic rocoto forest you have there, man!

Soy/ginger/garlic seared chicken thighs, roasted potatoes and brussels sprouts dusted with cherry smoked chipotle, and a slowly simmered bratwurst.

Oven roasted giant prawns in a creamed aji limo/garlic sauce, broccoli and crimini mushrooms in a Chinese style garlic/soy sauce, and steamed rice.

From the local international market here. They are super fresh, and about the same price per pound as tilapia right now.

Pan fried aji limo rubbed golden pampano, broccoli tossed in aji limo/garlic/soy sauce, steamed rice, and lemon wedges dusted with smoked rocoto powder.

Grilled picanha scewer with chorizo argentino, spicy chimichurri, roasted brussels sprouts and potatoes

Tray of baked manicotti in rocoto marinara, steamed broccoli and cauliflower.

My New Year's day dinner 2020 with some family visiting from New Mexico. Hatch red chile enchiladas covered in diced onions and fried egg, Hatch red chile pork tamales, and slow cooked pinto beans

Veal Osso Buco, gnocchi in a rocoto marinara, and steamed artichoke.

Fried red snapper, bok choy and cremini mushrooms in an aji limo/aji panca/garlic/soy sauce reduction, and steamed jasmine rice.

Thanks man, I'm glad you're digging this thread! I've posted a ton of other food/BBQ/gardening/hot sauce stuff throughout this site over the years. It's always fun foe me to find an old thread, and reminisce about a past garden or brisket, etc. Long live THP!
