    That's not a bad idea but my thinking is that I can measure the pH easy enough.  But I wouldn't know how to determine what ratio of acid is contributing to the overall pH of the sauce.  Meaning, if I were to test the sauces that i like, how much of the "bite" comes from the lactic acid vs how...
