Urfa pepper's flavor is a result of a week-long sun-drying process. They're wrapped up tightly at night and sweated and that really brings out a smoky flavor. Then the peppers are pounded into flakes and sprinkled with olive oil and salt, which really enhances the flavor. You've got to try them!
A chili called Urfa Pepper or Isot has a very interesting taste. "Smoky" and "raisins" are the descriptions most people use.
