Roast and peel the poblanos, cook the chorizo but leave the fat in the pan, saute the onions and mushrooms in the chorizo fat, cook the spanish rice, crumble some fresca cheese into the mix, mix everything together and stuff into the poblanos, crumble more cheese on top of the peppers, cook at 350 until cheese is brown.
