I boiled a mixture of Cayenne and Birds Eye chile peppers in white vinegar untill they turned soft - just short of mush
I then removed the chiles and pureed them.
After that I added:
- Freshly squeezed lemon juce
- the vinegar from the pot - untill I got to the fluid consistancy I was looking...

I am a first time hot sauce maker - I am currently growing some birds eye, cayenne and orange habanero's.
I have been scouring the Net for a basic recipe for a Peri Peri sauce but am finding too many different versions.
Can anybody help me with a basic recipe that I can then build...
We are going into our winter in the next few months so I will need to set up some sort of indoor growing room so we are ready in the summer which starts around September again.
Will have to start working on my motivation to the wife :-). She owns indoors and I own outdoor :-)

The heat is very mild (skin only) with a sweetish and tangy / sourish taste. Very interesting experience. I planted 5 seeds tonight, let's see what happens.
Have any of you heard of / tasted this one? It seams that the heat will overpower any potential flavor.

I read in Wikipedia that it is also known as the "rattle chili". The ones I have does have loose seeds inside and you can probably make music with it :-). It is about 3 centimetres in diameter - so ... yes, it can most definately be Cascabel.

Got this from a friend. They are bone dry and have been hanging in his kitchen for years. He believes them to be a paprika variant. Going to grow them to see what the fresh product looks like.
