    Oh there is quite the pool of sauce makers here. You are looking for niche market stuff. Most will stick with what sells the most so heat will be lower. Check out reviews. They should guide you well. While I like the taste of the yellow 7pot some prefer the scorpion and that is the same with sauces.

    I did the direct sunlight for a little at a time thing the first year I hardened. Now they go in carport for a week with no direct sun, just ambient and the ever important UV rays that come with it. This Saturday they will go in full sun for good.

    A couple years ago I planted the whole garden right from inside. A week of cloudy days followed. No burn. The next year, same thing, full bright sun for a week....death came fast. Then I learned about hardening.

    I have access to several groves and harvest when needed. I use them fresh, but generally I only cut them 3 or 4 feet long.
